White Chicken Chili

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1/2-inch cubes
  • 1 medium onion, chopped
  • 1.5 tsp garlic powder
  • 1 tbsp canola oil
  • 2 15.5 oz cans of Great Northern Beans
  • 14.5 oz chicken broth
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp pepper
  • 1/4 tsp cayenne pepper
  • 1 cup sour cream
  • 1/2 cup heavy whipping cream
  • Optional: Tortilla chips, shredded cheese, sliced jalapeños, chopped green chiles

Directions

  • In a large saucepan, sauté the chicken, onion and garlic powder in oil until chicken is no longer pink.
  • Add beans, broth, chiles and seasonings.
  • Bring to a boil.
  • Reduce heat; simmer, uncovered for 30 minutes.
  • Remove from the heat; stir in sour cream and heavy cream.
  • If desired, top with tortilla chips, cheese and jalapeños.

Prep time: 10 minutes; cook time: 40 minutes; serves 5
