Nankattai (butter biscuit)

Ingredients

  • Sieve 3 times
    • 1 ½ cups all-purpose flour
    • ½ cup chickpea flour
    • ¾ cup white or brown sugar
    • 1 tsp baking powder
  • 1 tsp cardamom powder, to taste
  • ½ cup of liquid ghee (clarified butter)
    • Add ¼ cup slowly
    • You may not need to use all of the ½ cup.

Directions

  • Preheat oven at 350 degrees Fahrenheit.
  • After sieving, add the cardamom powder, mix well. Then slowly add the liquid (melted) ghee and make a dough.
  • Make small balls, flatten them and arrange on baking tray.
  • Keep the baking tray in the preheated oven in the middle rack for 10 minutes. Switch off the oven and keep the tray inside for 2 more minutes.
  • Take it out, and let it cool completely on the tray before storing them in a box.
    • They will crumble if not cooled completely.
