Mexican Mole

Ingredients

  • 6 saltine crackers
  • 1 tsp cinnamon
  • 2 tsp peanut butter
  • 2 mini Snickers
  • Less than 1/2 tsp sugar
  • 2 cups chicken broth
  • 2 tsp Doña Maria Mole Poblano sauce

“The first is my paternal Grandma’s mole recipe. It’s the perfect Mexican comfort food, made even more special by the love my Grandma put into every batch. She taught all her grandkids to make it, and some have perfected the recipe more than others (I am not one of them). Directions

  • Blend saltines, cinnamon, peanut butter, one mini Snickers, sugar and 1 cup of broth.
  • Eat the second mini Snickers.
  • Add the juice from the top of the mole jar and 2 tsp mole to blender. Blend.
  • Add 1 cup of broth. Blend more.
  • In a large, heated pan, add a little bit of oil and pour the liquid mix in. Stir briefly (in circular motions only) and let simmer.
  • Serve with your favorite arroz con pollo and enjoy!
