Fresh Apple Cake

Ingredients

  • 4 cups unpeeled apples, diced
  • 1 cup walnuts or pecans, chopped
  • 2 cups white sugar
  • 3 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 eggs, beaten

Directions

  • Mix apples, nuts and sugar together. Let stand 1 hour, stirring every 15 minutes so the mixture makes it own juice.
  • Add flour, salt, soda, nutmeg and cinnamon to apple mixture.
  • Mix well, but do not use an electric mixer.
  • Add oil, vanilla and eggs. Mix well.
  • Pour into a greased and floured Bundt pan.
  • Bake at 350 degrees Fahrenheit for 45 minutes to 1 hour.
  • Cake is done when a toothpick comes out clean.
  • Remove from oven and invert cake onto a plate.
  • Cool thoroughly and sift light coating of powdered sugar on top before serving.
