Ingredients
- 4 cups unpeeled apples, diced
- 1 cup walnuts or pecans, chopped
- 2 cups white sugar
- 3 cups flour
- 1/2 teaspoon salt
- 2 teaspoons baking soda
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1 cup vegetable oil
- 1 teaspoon vanilla
- 2 eggs, beaten

Directions
- Mix apples, nuts and sugar together. Let stand 1 hour, stirring every 15 minutes so the mixture makes it own juice.
- Add flour, salt, soda, nutmeg and cinnamon to apple mixture.
- Mix well, but do not use an electric mixer.
- Add oil, vanilla and eggs. Mix well.
- Pour into a greased and floured Bundt pan.
- Bake at 350 degrees Fahrenheit for 45 minutes to 1 hour.
- Cake is done when a toothpick comes out clean.
- Remove from oven and invert cake onto a plate.
- Cool thoroughly and sift light coating of powdered sugar on top before serving.
