Ingredients
- 2 cups of sugar
- 1/2 cup of cocoa
- 1/2 cup shortening
- 3 eggs
- 2 cups of flour
- 1 heaping tsp baking soda
- 1/2 cup cold coffee
- 1 cup boiling water or hot tap water

Directions
- Sift 2 cups sugar with ½ cup cocoa.
- Cream with ½ cup shortening.
- Add 3 eggs (1 at a time) and beat.
- Sift 2 cups flour with 1 heaping teaspoon of baking soda.
- Add alternately ½ cup cold coffee.
- Add 1 cup boiling water or hot tap water.
- Bake at 350 degrees for 25-30 minutes.
7-minute Icing
Ingredients
- 2 egg whites
- 1 1/2 cups of sugar
- 1 1/2 tsp light corn syrup or 1/4 tsp cream of tartar
- 1/3 cup of cold water
- Dash of salt
- 1 tsp vanilla (add after icing is made)
Directions
- Put all ingredients (except vanilla) in double boiler or two pans with the bottom filled with water.
- Beat on high for approximately 7 minutes or until icing makes a peak when touched by finger or knife.
- Remove from heat and continue beating while adding vanilla.
