Black Chocolate Coffee Cake

Ingredients

  • 2 cups of sugar
  • 1/2 cup of cocoa
  • 1/2 cup shortening
  • 3 eggs
  • 2 cups of flour
  • 1 heaping tsp baking soda
  • 1/2 cup cold coffee
  • 1 cup boiling water or hot tap water

Directions

  • Sift 2 cups sugar with ½ cup cocoa.
  • Cream with ½ cup shortening.
  • Add 3 eggs (1 at a time) and beat.
  • Sift 2 cups flour with 1 heaping teaspoon of baking soda.
  • Add alternately ½ cup cold coffee.
  • Add 1 cup boiling water or hot tap water.
  • Bake at 350 degrees for 25-30 minutes.

7-minute Icing

Ingredients

  • 2 egg whites
  • 1 1/2 cups of sugar
  • 1 1/2 tsp light corn syrup or 1/4 tsp cream of tartar
  • 1/3 cup of cold water
  • Dash of salt
  • 1 tsp vanilla (add after icing is made)

Directions

  • Put all ingredients (except vanilla) in double boiler or two pans with the bottom filled with water.
  • Beat on high for approximately 7 minutes or until icing makes a peak when touched by finger or knife.
  • Remove from heat and continue beating while adding vanilla.
